Bananna Muffins

If you’re anything like me, you probably buy bananas and then neglect them on your counter until they are way too ripe! Instead of throwing them out, make these super easy, quick, and delicious muffins. They’re perfect for grabbing on your way to an early class.

Ingredients:

3 ripe bananas
¾ cup sugar
½ tsp. vanilla extract
1 egg
⅓ cup butter, melted
1 tsp. Cinnamon
½ tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 ½ cups flour
½ cup baking chips (optional) – I use salted caramel baking chips from Trader Joe’s, but this step is completely up to you. Chocolate chips, butterscotch chips, or walnuts would all pair well!

Instructions:

Preheat oven to 365°.
Mash bananas with a fork.
Add sugar, vanilla extract, egg, butter, cinnamon, salt, baking soda, baking powder, and flour.
Mix until combined.
Stir in baking chips, if desired.
Spray muffin tin with nonstick cooking spray or, for easier clean-up, use cupcake liners.
Distribute muffin batter evenly in muffin tin.
Bake for 18-20 minutes.
